Wild fermented in a single 400L open-fermenter. Hand plunged twice daily releasing vibrant aromas of baked cherry pie. Pressed with Bonnie, our basket press, into a single, aged 300L barrel and matured in barrel for 11 months, before hand-bottling with love. A 100% natural wine; nothing but wild fermented, organic grape juice. Zero added sulphur. Zero added anything. Only 33 dozen made.
Stewed spiced cherries, currants, dried fennel and anise. A warm hug with a delicate dapple of afternoon light. Generous deep fruits, moderate tannin and body, all about balance.
