Wild fermented in a single 400L open-fermenter. Hand plunged twice daily, releasing vibrant aromas of baked cherry pie. Pressed with ‘Bonnie’ the basket press into a single, aged 300L barrel and matured in barrel for eleven months, before hand-bottling with love. A 100% natural wine; nothing but wild fermented, organic grape juice. Zero additives. Zero sulphur.
